Recipe Love : Spiced Poached Pear with Chocolate Rice

What a windy weekend! I have never known it to be so windy. I hope you had a lovely weekend despite the weather.
Today we have a lovely warming recipe to cheer up those Monday blues. This has been kindly sent to us from Yoori of  The Chick Who Eats and it looks really lovely and easy to make.

Spiced Poached Pear with Chocolate Rice

‘This is great for breakfast and will keep you going for the day for a while! Though it may sound a bit laborious, poaching pears is actually super easy. It only takes a bit of time, but the good news is that most of the time you don’t need to be active, you just need to wait for the pears to poach! A good excuse to make coffee in the meantime or bury your nose in 1 or 2 chapters of your favourite read.’

Ingredients:

  • 2 small pears
  • 1 slice of orange and some orange grind
  • 1 cinnamon stick
  • 1 tbsp ground cinnamon
  • 1 tbsp ground fresh ginger
  • 2 tbsp molasses
  • 1/2 cup pudding rice
  • 2 cups almond milk
  • 1 handful or coconut flakes
  • 2 tbsp dark chocolate (ground)

Step 1) Take a large pot and fill it half with water. Add cinnamon stick, molasses, ground cinnamon and ginger and bring to a boil.

Step 2) Meanwhile peel the pears. I left them whole, but you can also cut in half.

Step 3) Add the pears to the boiling spiced water, reduce the heat and simmer for about 1 hour with the lid closed.

Step 4) Add the rice, coconut flakes, chocolate and milk to a pot, bring to a boil and simmer.

Step 5) Keep stirring as the liquid is evaporating until the rice is all cooked. The rice should take about 25 minutes until its soft.

Step 6) Divide the rice into two bowls and top with a poached pear each. Sprinkle some cocoa powder or ground chocolate for serving.
