Squash, Spinach and Feta Flatbreads

This is one of those delicious, lazy, meals you can throw together with ease, making it ideal for a midweek treat or a casual weekend lunch if you have people popping over.
To be fair I had roasted the butternut squash the night before to make this Couscous number but it’s worth doing it just for this as the flavours work so well together.
Ingredients:
- Garlic flatbreads (I got mine from Sainsburys)
- Red onion chutney
- Baby spinach leaves, washed
- Feta, cubed
- Balsamic glaze
- Roasted butternut squash cubes
Recipe:
STEP 1) Preheat the oven and cook the flatbreads according to the packet instructions (usually around 8 minutes) whilst you chop up all the toppings.
STEP 2) When the flatbread is done spoon over a layer of red onion chutney then top with plenty of spinach leaves, roasted squash and crumbled feta.
STEP 3) Drizzle with balsamic glaze and cut into generous slices to serve.

Simple as that! Of course the garlic flatbreads aren’t exactly calorie free but as a treat, topped with vitamin-rich spinach and squash it tastes flipping good.
